When you have finished cooking your stock you will need to drain it through a fine steel sieve (like the one in the picture). This will remove all the remaining impurities and slime, leaving you with a lovely clear stock ready to concentrate!!! Make sure you pour it through slowly trying not to force it as this will give you clearer stock.
