Garlic Chicken In Creamy Mushroom Sauce **Easy

This is a very simple dish to cook and it is one of those meals that really does have a restaurant quality to it. If you want to impress someone special with your Italian cooking then this is the dish!! The sauce used for this is not one of the mother sauces and has no flour so it's very easy but the flavour is simply fantastic and authentic.

Serves 2 as a main meal


Ingredients:
2 chicken breasts           3 cloves of garlic
200g tagliatelle               pinch of salt
250g mushrooms              pinch of black pepper
150ml dry white wine       150ml creme fraiche
20g butter                      2 glugs of extra virgin olive oil
1 large onion                  1 sprig of fresh parsley

Method:
1) Chop the chicken into small bite size pieces
2) Peel and crush 2 cloves of garlic
3) Gently heat 1 glug of oil in a saucepan
4) Add the chicken, garlic, salt and pepper to the pan and cook thoroughly (about 10mins) then place to one side and cover to keep warm
5) Chop the onion finely, slice the mushrooms, peel and crush the remaining clove of garlic
6) Gently heat the butter and 1 glug of oil in a medium sized saucepan. Add the onion to the pan and sweat down but do not brown
7) Add the mushrooms, the garlic and cook gently for no more than 3 minutes
8) Add the wine and simmer vigorously until the liquid has reduced by about half then stir in the creme fraiche and heat through
9) Meanwhile cook the tagliatelle al dente and serve on plates
10) Place the chicken on top of the tagliatelle and then pour the sauce over the top of the chicken and garnish with finely chopped fresh parsley along with some fresh ground black pepper

Tips: Try sourcing some wild mushrooms for an even better taste. After you have drained the pasta try pouring just a little olive oil over it and tossing it thoroughly before serving for a lovely authentic Italian taste!
